Black forest birthday cake!

O yes! Finally bake a proper birthday cake with perfect whipped cream topping and
yummy chocolate sponge cake... this time i succeed in whipping cream. The chocolate sponge cake's texture however has to be a lil more spongy but its k cause its my first time... here have a look at it. Vanilla M&M cupcakes


























Made this for my bestie's suprise birthday party. I topped the cupcakes with wipped cream and strawberries... i don't know why i can't whip the cream to its rite consistency. I tend to over whip them... hmmmm sad abt it!

Miniature Brownie Cups


































I am in love with brownies now... I adapted this recipe from this Jumbo book that my dearie bought me from borders. He certainly knows my obsession with cooking and baking. The book is called "Treasury of Home Baking". Should say that it has all kinds of recipes. Lets come to how the brownie cups tasted... well it was super rich and since i reduced the amount of sugar, it was just rite for my tastebuds.

Recipe for miniature brownie cups:

6 tbsp butter melted
3/4 cup sugar ( i reduced it to 1/2 cup)
1/2 tsp vanilla extract
2 eggs
1/2 cup all-purpose flour
1/4 cup hershey's cocoa powder
1/4 baking powder
dash salt
1/4 semi sweet chocolate chips

1.Heat oven to 180 degress. Stir together butter, sugar and vanilla in a medium bowl. Add in eggs; beat well with spoon.

2. Stir together flour, cocoa, baking powder and salt; gradually add to butter mixtur, beating with a spoon until well blended. Fill the paper cups 1/2 full with batter.

3. Bake for 12 to 15 mins or until wooden pick inserted in center come out almost clean. Cool slightly; remove brownies from pan to wire rack. Cool completely.

Heavenly butter cake

Baked a cake after such a long time... i've always loved butter cake cause of it's rich taste in butter... yums. Promised cheong that i'll bake her brownies the next time i meet her..so here's the pic of my butter cake.

Brownies

Recipe:

1 cup butter
2 cups sugar
2 tsp vanilla extract
4 eggs
1/4 cup cocoa powder
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup hershey's chocolate chips

Method:

1. heat oven to 180 degrees. Grease a 13by9by2 inch baking pan.
2. Place butter in a large bowl. Microwave at HIGH until butter is melted.
3. Stir in sugar and vanilla. Add egg, one at a time, beating well with a spoon after each addition.
4. Add in cocoa powder; beat until blended. Add flour, baking powder and salt; beat well.
5. Stir in chocolate chips. Pour batter into a prepared pan.
6. Bake 30 to 35 mins or until brownie starts to pull away from sides of pan. Cool completely in pan. Cut into bars.

I made this dish very very long time back. haha doesn't look that nice cause of the photo quality but it tasted so yummy.:)I had some left over fusilli so i made this dish by combining what i had in my fridge.. like prawns, eggs, onions, minced chicken and curry power.. hahaha

Egg Tarts

My love for egg tarts..... HAhaha but i tried to do mini egg tarts :) its yummy... But I used the small mould to do them so I could not fill each tart with much egg custard... So ya learnt something!

Brandy cake

























Had some leftover brandy after baking fruit cake during Christmas so i used it to make brandy cake.... Hmmm but must say that i didn't really succeed.. The taste was not too bad but it was a lil hard.

Pandan Muffins... 2nd attempt

The previous time i baked pandan muffins they were not so soft and it did rise much.. so as a result a lil short haha.. but this time round the muffins were taller and softer like how muffins are meant to be. I topped some muffins with chocolate chips and left the rest plain. Have a look at it! Compare it to this.

Pineapple Tarts

I made pineapple tarts for Christmas and this time round i think this time round it the pineapple paste was a lil watery and didn't stay fresh for too long. I could only keep it for about 3 weeks but nevertheless it tasted marvelous. ;)

Here's the picture and the recipe follows.....

















Recipe for pineapple tarts:


Dough:

500g plain flour

275g butter

2 tbsp corn flour

1 egg

1 tsp vanilla essence

1 pinch salt


method:

1. Mix flour, corn flour and butter till it forms bread crumbs.

2. Add in egg, vanilla essence and salt and knead till it forms a soft dough.


Pineapple filling:

2 pineapple

6 tablespoon sugar

2 pandan leaves

a pinch of salt


method:

1. Blend the pineapple in a blender and then strain the blended pineapple. Make sure that the pineapple plup is not too dry.

2. In a pan, add in the pineapple plup(not the juice), sugar, salt and pandan leaves. Keep stiring till it forms jam like substance.

3. Cool it.


Method to make the pineapple tarts:

1. Flatten the dough using a rolling pin. Use the mould and cut out the shape.(make sure you dusy the mould with some flour or the dough will stick to the mould).

2. Roll the pineapple filling into a ball and place it on the cut out shape.

3. Arrange on a baking tray. Repeat the process.

4. Bake at 180 mins for 15 mins.
