The Gorgeous Classic Cheesecake!
Simply Sinful!
O yes... I also baked Classic cheesecake yesterday with sil... I have always wanted to bake a cheesecake and finally I made it. The results were appealing. It was so creamy, rich and most of all scrumptious hahaha. O yummy.... this is what I can say!
I had to use sour cream for the cheesecake but I substitute it for yogurt mixed with 1tsp of lemon juice. If you can't find sour cream at yr local supermarket, you can use yogurt as well. So let me share with u the pics and recipe.
Here's the recipe for:
Classic Cheesecake
Ingredients: (20cm)
Biscuit base:
150g digestive biscuit crumbs
65g - 75g melted butter
Filling:
500g cream cheese at room temperature
100g sugar
3 eggs
1.5 tbsp cornstarch
220g sour cream ( I substitute it with yogurt with 1tsp lemon juice)
125g whipping cream
2 tbsp condensed milk
1 - 2 tbsp lemon juice
1 tsp lemon rind
1 tsp vanilla essence
Method:
1. Mix biscuit crumbs with melted butter. Toss biscuit crumbs into a lined 20cm cake pan and press firmly. Bake biscuit base at 160C for 12-13 minutes. Cool for use later.
2. Cream cheese with sugar till smooth and creamy.
3. Add in egg one at at time and beat till well blended.
4. Using low speed, beat in the sour cream, whipping cream, condensed milk, lemon rind, cornstarch, lemon juice and vanilla essence.
5. Pour cheese filling into biscuit base.
6. Bake at 175C - 180C for 50 - 60 minutes.
